NVDE Ciment is made from a very special Macabeo plot called “Camino del Canal”, located in the town of Albinyana. The wine is made with minimal intervention to allow the vineyard and the variety itself to express themselves fully, obtaining a wine that speaks of a landscape, a pure and frank wine. Spontaneously fermented in a cement egg, we get a wine with volume and fresh aromas reminiscent of white fruit and citrus.

Description

Winemaking: Harvested on September 5. After a gentle pressing and a slight demisting, the flower must was transferred, at half fermentation, to an oval cement tank, without the addition of yeasts (only indigenous yeasts). Once the fermentation was finished, it aged on its own mothers (almost 7 months in total). Minimal intervention vinification (indigenous yeasts, not stabilized, no sulfites). Can produce natural sedimentation.
