Average altitude and composition. The hill is located at 250/450 meters (820/1476 feet) a.s.l, of volcanic origin with tuffaceous, clayey and calcareous soil.

Harvest:
Usually at the beginning of October, the grapes are laid on boxes after a careful hand selection prior storing in the cellar loft till January.
Vinification:
Destemming and soft crushing. Fermentation in steel tanks with daily punching down. In February the skins of grapes used to make Amarone wine, are introduced in the steel tanks for a second fermentation (this is the famous ripasso tecnique). Once the malolactic fermentation is over, the wine is aged for at least twenty months in large 30 hl Neutral French Oak barrels. The wine then mature in bottle for six months before being released to the market.
Organoleptic description:
Deep ruby red.
Intense and vibrant with fine tannins, floral, fruity, spices aromas such as black pepper and cinnamon, licorice, vanilla and tobacco.
Full-body and pleasantly harmonious in the mouth. The flavors remain true to the nose. Long finish. Drink now and has a beautiful potential of aging for 10+ years. Outstanding!

Excellent with roasts, stews or braised meats. It goes well with asian cuisine and umami experiences. Also delicious alone by the glass or with aged cheeses.
