Coming from our plot “Les Graves”, a high-altitude vineyard with clay-limestone soil, this Pinot Noir rosé is a great tasting rosé, elegant and exceptionally deep.

The Domaine de la Métairie d’Alon is a 25-hectare vineyard planted with Pinot Noir and Chardonnay, located in a mountainous area around the village of Magrie, between Limoux and Roquetaillade, in the Upper Aude Valley. Managed organically on an exceptional terroir, it allows the Delaunay family to express the best of their Burgundian sensitivity and expertise in producing great Pinot Noirs and Chardonnays in Languedoc. The “Parcel Selections” are wines from our best plots that reflect the intrinsic character of their terroir.

Terroir:This wine is named after its original plot, “Les Graves,” located at an altitude of 250m in a cool corridor, on steep hillsides facing due west. The very stony clay-limestone subsoil gives the wine great minerality.
Vinification and aging:The grapes are hand-harvested in openwork crates. Immediate pressing of whole bunches without the addition of sulfur. The “tails” and “tails” (beginning and end of pressing) are separated to eliminate the coarsest lees and any risk of bitterness. Cold settling for 24 hours, then fermentation without sulfur in temperature-controlled stainless steel vats. Early bottling in February – March.
Tasting notes:Beautiful light pink color. The initial nose evokes citrus fruits (lemon, clementine) and elegant floral notes (orange blossom). On the palate, the attack is round, rich and delicious. Then the finesse arrives, with more mineral (flint, flint) and tense (citrus) notes. The finish, of exceptional length, is more grapefruit and anise. A rosé of great depth.
Tasting tips:Serve at 10°C. Drink within 4 to 5 years.
Food and Wine Pairing:Delicious as an aperitif, with beautiful seafood and shellfish, Asian cuisine or as a dessert with a strawberry and basil salad.
