Resilience Grillo Sicilia DOC – A Fresh Expression of Western Sicily
The Resilience Grillo Sicilia DOC is a vibrant white wine made exclusively from 100% Grillo, one of Sicily’s flagship native grape varieties. Produced from traditional alberello (bush-trained) vineyards, it showcases the freshness, elegance and Mediterranean character that have made Grillo one of Italy’s most exciting white wines.
Why Choose Resilience Grillo Sicilia DOC
The vineyards are cultivated using the traditional free-standing alberello training system, naturally limiting yields and producing grapes with greater concentration. Furthermore, the grapes are harvested by hand and gently pressed to preserve their delicate aromas and natural acidity.
After fermentation, the wine remains on its fine lees, creating additional texture while maintaining freshness. As a result, it offers exceptional balance, vibrant fruit and excellent versatility at the table.
Grape varieties: Grillo 100%
Maturation: Soft pressing followed by temperature-controlled fermentation. The wine is then aged for 4 months in stainless steel tanks on the fine lees, with frequent bâtonnage to enhance texture and reduce the need for sulphites.
