TERROIR(S)
Six terroirs go into the production of a Les Jamelles Chardonnay! Fresh, mineral or saline terroirs, such as the Thau Basin , the upper Aude valley near Limoux, or the west of Aude ; terroirs which will bring richness and roundness such as the Narbonne hinterland or the Orb hillsides ; or even the Aude plain which will bring tension and length.
WINEMAKING
Alcoholic fermentation is slow (3 to 6 weeks) and temperature regulated. Around half of the vintage is aged in wood, on fine lees, for 9 months with regular resuspension of the lees (batonnage).
TASTING
Chardonnay Les Jamelles stands out for its freshness, fruit and richness, which are reminiscent of the Burgundian origins of the wines’ creator, Catherine Delaunay.
FOOD & WINE
Serve very cool (12°C) as an aperitif, with seafood, fish, cold meats, white meat. Catherine Delaunay particularly likes to pair it with a nice roast chicken and potatoes , or a sea bass en papillotte.
