Château Haut-Claverie is a family-owned wine estate in Fargues, only a few minutes from Langon in the heart of the Graves and Sauternes area.
The same family has owned the property since 1800. Today, Pascal and his brother Loïc continue the family’s work, combining traditional methods with modern winemaking. Moreover, the estate achieved HVE Level 3 certification in 2019, reflecting its focus on responsible vineyard management.
Château Haut-Claverie 2019 – Sauternes
The Château Haut-Claverie 2019 is a sweet white Bordeaux from the famous Sauternes appellation.
The estate’s Sauternes vineyards sit on gravel and clay soils. Moreover, the team harvests the grapes by hand through several selective passes. This allows them to pick fruit at the ideal stage of concentration.
As a result, the wine combines sweetness and ripe fruit with enough freshness to keep the palate balanced.
Grape Varieties
- Sémillon
- Sauvignon Blanc
These are the grape varieties confirmed by both the producer and 2019-specific listings.
A third-party cellar database lists 80% Sémillon, 15% Sauvignon Blanc and 5% Muscadelle for 2019. However, because the producer currently identifies only Sémillon and Sauvignon, I would not put exact percentages or Muscadelle on the product page without the original 2019 technical sheet.
Vinification & Maturation
The estate follows traditional Sauternes methods while using modern temperature control.
Vinification and maturation:
- Hand harvesting
- 3 to 6 selective picking passes
- Fermentation in temperature-controlled stainless-steel tanks
- Maturation in cement vats
- 6 to 18 months in oak barrels
The selective harvest helps achieve the concentration required for Sauternes. Meanwhile, the combination of cement and oak allows the wine to gain depth while keeping its fruit and freshness.
Tasting Notes
- Colour: Golden yellow with bright reflections
- Aroma: Candied citrus, ripe fruit, honey and delicate spice
- Palate: Rich and smooth with orange marmalade, ripe fruit and fresh acidity
- Finish: Balanced and persistent with citrus and sweet spice
The producer describes its Sauternes with notes of candied orange, orange marmalade and gingerbread, followed by a fresh finish. A 2019-specific listing also notes jammy fruit, citrus and good freshness.
Food Pairings
The Château Haut-Claverie 2019 pairs beautifully with:
- Foie gras
- Blue cheese
- Gorgonzola
- Roast chicken
- Fruit desserts
- Bitter chocolate tart
- Lightly spiced Asian cuisine
Moreover, Sauternes can work beautifully as an aperitif. Serve it chilled at approximately 8–10°C.
Style and Character
The Château Haut-Claverie 2019 combines the richness expected from Sauternes with a fresh and balanced character.
Moreover, Sémillon provides body and richness, while Sauvignon Blanc brings energy and freshness. Oak maturation adds further depth without taking away from the wine’s fruit.
As a result, the palate feels rich yet balanced rather than overly heavy. Overall, Château Haut-Claverie 2019 is an approachable Sauternes with classic Bordeaux character, ideal with foie gras, cheese, dessert or simply enjoyed on its own.
