It is straw yellow with green hues and a bouquet of decisive modern notes, fruity and floral. Delicate hints of peach, melon and citrus fruits. It has a pleasant and delicate character with an excellent balance between its sapidity and acidity. Elegant persistence which is enhanced when drunk. Ideal as an aperitif and pairs well with fried seafood and fish carpaccio.
The vine variety is 100% Insolia. The grapes are hand-picked and placed in small baskets. They are worked quickly to maintain the unique characteristics of these grapes, respecting their territorial origin. The soft pressing guarantees the faithfulness of the scents and natural acidity of the must. Subsequently the static clarification of the must is obtained at 12°C for 24 hours and the fermentation is monitored daily to enhance the varietal characteristics. Refinement takes place in stainless steel silos for 5 months with frequent batonnage to maintain the noble lees in suspension and limit the use of sulphites.
