- GRAPE VARIETY:Sauvignon blanc is a relatively late grape variety. Extremely vigorous, the vine must be planted in slightly to moderately fertile soils, using low productivity rootstock and must be pruned appropriately. Sauvignon is a grape variety that thrives on all types of limestone soils. Hard limestone, marl and loose marine sediments are equally suitable. The properties of Sauvignon are expressed differently depending on the terroir: it is spicier and more floral when the vines grow on gravelly terraces and more powerful and clean if the soils are marly and deeper.
- TERRITORY:This Sauvignon Blanc grows on limestone soils.
- WINEMAKING AND AGING:The grapes are harvested very early in the morning and directly pressed. Cold settling is carried out before fermentation at low temperature (between 14 and 16°C). The Sauvignon Blanc is aged on the lees in vats for approximately one month.
- TASTING NOTES:This wine has a beautiful pale yellow color. With its delicate aromas of blackcurrant leaf and gooseberry, it is elegant, aromatic and pleasantly fresh.
