Modern Cabernet with Tuscan Terroir
The estate created Il Pareto to explore Cabernet Sauvignon’s potential in Tuscany. They carefully studied local soils and climate. The vineyard yields limited grapes but with complex aromas and flavors. This wine reflects Cabernet’s classic traits enriched by the unique Tuscan terroir, offering body and finesse.
Tasting Notes – 2019 Vintage
The 2019 vintage reveals a deep purple‑red color. Aromas of pomegranate, marasca cherry, and prune dominate. Incense, bay leaf, and black pepper add a spicy complexity. On the palate, it is dry, full‑bodied, and flavorful. The tannins are firm, yet polished, and the finish is long and aromatic. Despite its youth, this wine already offers impressive balance and depth.
Food Pairing Suggestions
Il Pareto 2019 pairs wonderfully with flavorful dishes. Consider these pairings:
Stewed hare and other game meats.
Roasted or braised beef and lamb.
Mashed cauliflower with truffle or truffle risotto.
Aged cheeses such as Parmigiano Reggiano or mature pecorino.
Serve at 16–18°C. Decanting for 1–2 hours enhances aroma and flavor.
Vineyard and Aging Potential
Il Pareto is the estate’s cru and is made only in the best vintages. The vineyard is planted exclusively with Cabernet Sauvignon, at 3,000 to 5,000 vines per hectare. Annual production averages 5.5 tons of grapes per hectare, with a 60% grape yield. These factors contribute to the wine’s concentration and structure. First released in 1987, Il Pareto is celebrated for its age-worthiness. The 2019 vintage can cellar for up to 30 years, developing further complexity.
