Red Grenache 90%, Syrah 10%.
Attractive bouquet overflowing with bright cherry and raspberry notes. A rich intense rosé with depth and power, a fine crisp acidity complemented by appealing flavours of cherries and other red fruits. A refreshing summer rosé with depth and drive, ideal with pasta and rice dishes, as well as raw meat or octopus carpaccio.
Ètim La Pausa is perfect to sip at any time, even as an aperitif or in the afternoon, with friends or in a relaxing time on your own.
Best serving temperature between 12°C and 14°C.
Grapes come from selected vineyards of Grenache and Syrah planted on rocky, limestone, clay and slate soils.
After 24 hours of maceration at 5°C with the skins, the free-run juice is bled off to obtain the characteristic tone of our rosé. Once without the skins, the must ferments in stainless steel at a controlled temperature of 15°C.
In this careful process, the most important moment is the bleeding: the must acquires colour in contact with the skins, testing after testing, it is bled off until we get the desired colour for our Etim La Pausa.
