Winemaking and ageing

Manual harvest in crates by successive selections. Slow pneumatic pressing. No destemming or maceration. Gravity settling in a cold room and regular stirring of the lees. The wine is aged for 6 months in barrels (25%) and vats (75%).

Colour
The wine is of a subtle, shining golden colour.

Nose
The nose is complex, blending floral (wild white flowers) and fruity (pulpy white fruits, citrus) fragrances with refreshing notes of fresh aromatic herbs and star anise.
