VARIETIES
45% Clairette, 30% Roussanne, 25% Grenache.
WEATHER
Mediterranean type with particularly hot summers. The mistral drives out the humidity, thus providing conditions that are very favorable for growing vines.
VINTAGE
Plot selection over 1.5 hectares. It is obligatorily manual at optimal maturity, allowing a selective sorting of the harvest. We attach a great deal of importance to this point, which is qualitatively primordial.
VINIFICATION AND AGING
Direct pressing in the pneumatic press. Natural settling of the juices which are then placed in thermo-regulated vats; they are vinified at a temperature of around 15°C and do not undergo malolactic fermentation in order to preserve freshness and acidity. Aging takes place in wood for 3 to 6 months on a third of the final volume.
