Terroir: Vaucoupin comes from the coolest vineyards in this terroir, located on the side of a valley that benefits from south-eastern exposure. Composed of Kimmeridgian calcareous clay marls containing brown clay, the soil is stony, shallow and very well drained. Vaucoupin is a flagship of Chablis’s Premiers Crus. Though the terroir covers quite a small surface area (45 ha), it yields a remarkable wine that is mineral, structured, elegant and complex.
Vinification and aging The carefully settled grape juice is transferred to stainless steel vats for a high precision fermentation. The wine is then left in contact with its fine lees for several months and carefully aged with frequent tastings carried out to determine what operations, such as stirring (bâtonnage) or racking, need to be performed. Tasting notes Lovely pale gold in color. The highly expressive nose is fine and complex, boasting notes of white flowers (acacia) and citrus (lemon, lime) complemented by a slight hint of oak and aromas of baked goods (almond, honey, angelica). The palate is intense and taut, expressing considerable freshness with lemony citrus notes, lemon verbena, bergamot and a touch of mint. A chiseled, elegant wine endowed with perfect balance between acidity and roundness along with a nuance of refreshing citrus bitterness on the finish.
