The grapes come from four rigorously selected terroirs: the Narbonne hinterland which brings richness and opulence to the wine; the Aude plain which provides length and structure; the slopes of the Orb which provide velvety tannins, richness and complexity;
and finally the west of Aude , under oceanic influence, which brings freshness. Subtly blended, the vintages from these four terroirs offer an elegant and complex wine, with a lovely velvety feel and a nice length on the palate.

WINEMAKING
The grapes are completely destemmed. Maceration is long, with temperature control and numerous pumping overs. After malolactic fermentation, aging in vats lasts approximately 6 months. A small part of the vintage is aged in oak barrels.
TASTING
With a beautiful dark red color, Les Jamelles Cabernet-Sauvignon reveals aromas of red fruits (blackcurrant, strawberry), associated with a light, fresh vegetal note (green pepper, characteristic of the grape variety) and spicy aromas (cinnamon). , mint, honey). Its finish is subtly woody (with aromas of cedar, oak, nuts). The tannins are supple and silky.
FOOD & WINE
Serve at 17 – 18°C with traditional cuisine: shepherd’s pie, gratin, stew, grill, rack of lamb. Catherine Delaunay particularly recommends it with a cassoulet , an emblematic dish of Languedoc.
