It is loaded straw yellow. Its bouquet is ethereal, with notes of dried fruits (almonds) mixed together with ripe fruits (mature peach), with an important presence of vanilla. On the palate it is a wine which, apart from its remarkable structure, maintains a great balance and sapidity/ minerality typical of white wines that come from.
The vine variety is 70% Grillo and 30% Zibibbo. Wine making: 12 hours of cold maceration therefore the separation of the skins and fermentation with selected yeasts, with temperatures varying between 14-16°C to maintain unaltered the scents and aromas and to give more structure to the wine. There is no malolactic fermentation. Refinement takes place in 500 litre barrels and in 225 litre barriques for approximately one year, with a one year rest with yeasts on suspended yeasts using the batonnage technique.
