It is intense crimson red. Notes of black currants and ripe cherry emerge. Well integrated with spicy scents. Structured and powerful, with delicate tannins present. Thanks to its structure and imposing fullness it accompanies well char-grilled red meats, game, cold cuts and mature cheeses.
The variety is 100% Cabernet Sauvignon. It is a late variety, ripe around the end of September. Picked only upon perfect polyphenolic ripening of the grapes. They are then de-stemmed and left to ferment with the skins for 12 days at 26-27°C. Malolactic fermentation subsequently takes place with selected bacteria.
