Winemaking:
Vinification took place at the Quinta de Azevedo winery. On arrival, the grapes were carefully treated and gently fearless, in order to fully preserve their character. The channeling of the must is done using temperature controls and protected from oxidation by the use of inert gases. Soft crushing follows in a pneumatic press with some pre-fermentative maceration. Alcoholic fermentation takes place at temperatures between 16ºC-18ºC. During maceration, around 40% of the batch fermented in contact with the grape skins. This wine matured in stainless steel tanks with “bâtonnage”, stirring of the lees, for 3 months. Partial stage of 6 to 8 months in oak barrel followed by 6 months of aging in bottle.

Tasting Notes:
Delicate and fragrant, it relies heavily on floral notes, peach and some orange. Light and harmonious in the mouth, it is beautiful and shows a lot of white fruit, a well-balanced wine.
Store and Serve Advices:
Store horizontally. The fresh, fruity profile of this wine means that it is ready to be consumed immediately. That being said, this wine will act positively for at least 3 years.
Food Pairing:
An ideal aperitif, this wine pairs wonderfully with fish dishes, fresh salads and seafood. Its fresh character also makes it a perfect wine for outdoor refreshment.
