Winemaking: Harvested on September 5. After a gentle pressing and a slight demisting, the flower must was transferred, at half fermentation, to an oval cement tank, without the addition of yeasts (only indigenous yeasts). Once the fermentation was finished, it aged on its own mothers (almost 7 months in total). Minimal intervention vinification (indigenous yeasts, not stabilized, no sulfites). Can produce natural sedimentation.
