Composed from five rigorously selected terroirs, Sauvignon blanc draws its freshness and minerality from the Bassin de Thau , the Etang de Marseillette , the upper Aude valley , near Limoux, and the Ouest- Audois .
In some of these sectors, the difference in temperatures is very marked between very hot days and very cool nights and allows the development of the sought-after citrus aromas; the slopes of the Orb, north of Béziers, bring roundness to the wine.

WINEMAKING
The grapes are harvested very early in the morning, or even at the end of the night. They are quickly transported to the vat room to be pressed. Alcoholic fermentation takes place quickly in stainless steel vats at 18-20°C. Contact with air is avoided.
Aging lasts a few months on fine lees at low temperature, in a carbonic atmosphere. There is no malolactic fermentation so that the wine retains all its freshness. Bottling happens quickly, with Sauvignon Blanc being one of our first grape varieties to be bottled.

TASTING
With a pretty pale color, Les Jamelles Sauvignon Blanc is tense and aromatic, with flavors of fruit (passion fruit, wild strawberry), citrus (pink grapefruit, and even lemon) as well as vegetal notes ( green tomato).
It has floral nuances (honeysuckle), as well as a mineral “flint” scent. On the palate, it is very fresh and mineral, with good acidity and a refreshing bitterness on the finish.

FOOD & WINE
Serve very cool (8°C) as an aperitif, with seafood or summer cuisine. Catherine Delaunay particularly recommends accompanying it with a sea bream ceviche or a shrimp, grapefruit and avocado salad or even a grilled cod fillet with citrus sauce.
