Tasting Notes
Aromatics of green apple, dried apricots, completed with hints of jasmine. The pallet is rich, creamy and shows good concentration, balanced by a bright acidity that adds backbone to the wine.
Winemaker’s Notes
The grapes were harvested in the early morning and processed reductively to preserve flavours and aromas.
After settling out all rough lees, the juice was racked and inoculated with a selected yeast strain and fermented between 13 and 15 degrees Celsius. Filtered and bottled in March 2024.
Serving Suggestion
Will pair well with most seafood dishes, goats cheese or roasted pork belly.
