The uniqueness of this locality Sancerre is based on a plot selection in limestone mono-terroir by lengthening the aging on fine lees in stainless steel vats for 9 months.
The aromatic structure is fine and offers the citrus freshness of Sauvignon with a dominant of lime, notes of lemongrass and green apple (Granny Smith). The mouth reveals a beautiful intensity of flavors, lively and pure with a chalky finish and good length.
Food and wine pairing: this white wine is to be served with grilled fish, a fish terrine, oysters, poultry or veal in sauce, creamy risottos … Don’t forget the Sancerre Chavignol alliance either!
